research showsThe grade is C with 42 points. A 12-week trial randomized 60 adults and analyzed 53 completers. The paper did not report effect sizes directly; conversion from its table put triglycerides at a conventional medium magnitude and apolipoprotein B slightly below it. All outcomes were laboratory or imaging markers rather than clinical events.
ads claimAdvertising should not bundle triglycerides and ApoB as two firmly established benefits of 32 g whole gochujang. Between-group changes and group-by-time interactions were significant for both, but the converted ApoB effect fell slightly below a conventional medium magnitude, and no myocardial infarction or other clinical event was measured.
Useful facts when choosing a product
- The paper stated that the daily supplement provided about 6 g salt. If treated entirely as sodium chloride, that equals about 2,358 mg sodium or 118% of a 2,000 mg daily value, but a direct sodium assay for the 32 g trial product was not publicly confirmed.
- One gochujang sample contained histamine at 8.67±0.41 mg/kg and other amines were detected. A single sample cannot represent all commercial products.
- Nitrite and N-nitroso compounds in the trial product were not confirmed.
- Gochujang developed after chili entered Korea, so ancient records of fermented soybean pastes are not direct records of modern gochujang.
- Triglycerides, ApoB, and CT visceral fat are risk markers rather than myocardial infarction, stroke, or another clinical event.
What the research actually shows
Table 5 in Cha YS et al. 2013 was checked directly. Its header says n=30 in each group, while the completer analysis used 26 gochujang and 27 placebo participants, an inconsistency within the paper. Converted standardized differences were about 0.546 to 0.548 for triglycerides and 0.478 for ApoB. NCT01532375 first became public after the trial, so it cannot fully protect against outcome selection after results were known.
Why this is classified as C (42)
The converted triglyceride effect was conventionally medium, while ApoB in the bundled claim fell slightly below that magnitude. The evidence is one small completer analysis of surrogate markers with retrospective registration, yielding C with 42 points.
Counterpoint. The triglyceride signal is worth testing, but independent replication of whole gochujang with consistent lipid results or clinical events is needed.
