What the research actually shows
Twenty healthy adults entered an open-label randomized crossover pilot comparing two weeks each of low- and high-AGE preparation of the same ingredients. Some food CML values were estimated from a database or substituted from similar ingredients and methods, and were about half as high during the low-AGE period. Serum CML and MG-H1 measured by mass spectrometry were also lower, alongside a mean 1.8-kg weight loss over the study. Serum comparisons mainly used simple paired tests, while weight was a fixed effect only in the proteomics analysis. The registry listed 11 primary outcomes: fecal calprotectin, short-chain fatty acids, microbial composition, two permeability measures, two systemic-inflammation measures, cardiometabolic markers, lipids, weight, and handgrip strength. The trial began on 2022-02-01 and ended on 2022-07-30, but its first registry submission was 2024-07-31, making registration retrospective.

This was a 20-person, two-week-per-period biomarker pilot. It was small and short, and weight and dietary-composition changes moved alongside cooking. No validated clinical threshold or adjusted estimate permits the mixed marker results to be reduced to one clinically interpretable effect size.
Counterpoint. A fall in circulating AGEs is a biological signal, not evidence of fewer myocardial infarctions or strokes. A longer isocaloric feeding trial is needed.
